No Cream Creamed Corn


Remember when you used to have creamed vegetables? Creamed onions at Thanksgiving, creamed broccoli with steak…

And of course, the ultimate veggie comfort food dish – creamed corn.

This is a very simple vegetable dish that is made without any cream or milk or butter, and one that I am very proud of.

No Cream Creamed Corn

Ingredients:
1 head cauliflower, chopped into florets
2 tbsp olive oil
1 tsp salt
1 package frozen corn

Directions:
1. Steam cauliflower until softened
2. Transfer cauliflower to a food processor or blender. Add the salt and olive oil. Puree until very creamy.
3. Heat frozen corn in microwave for five minutes until done. Stir as needed.
4. Pour cauliflower puree over corn and mix.
5. Serve hot.

This concept can be used to make any version of creamed of veggies you like. It’s also a fantastic way to disguise a vegetable dish for veggie-phobic kids!

Oh, I love this idea! Pureed cauliflower instead of the usual soy/rice milk? Brilliant!

hsw, good luck with the food challenge! If your daughter likes it, the same concept works with just about any veggie -- carrots, peas... whatever she can eat!

My daughter absolutely loves cauliflower. I've been trying to think of ways to puree it and use it and this is pure genius!

Great - she loves carrots, too! She's not as big a fan of onions, (she liked them at age 3 and changed her mind at 4), but I *L-O-V-E* onions! :)
